Q Guild British butchers visit New Zealand

Yorkshire butcher David Lishman will lead a team of five Q Guild British butchers on a trip to New Zealand, where they will be competing in a Tri Nations competition against Kiwis and Aussies.

The visit will start as a study tour, where the butchers will learn more about the Australian and New Zealand trade and techniques, in addition to practical sessions.

The end of the tour will see the first Butchery Tri Nations competition take place on the lake front at Wanaka in the South Island, where the finest butchery skills will be tested.

The butchers joining award-winning Lishman are Brindon Addy, Robert Jones, Jon Thorner and Richard Carter. They will be learning and competing for five days, starting tomorrow (5 March).

Speaking about the trip, David said: "Our ties with the Kiwis and Aussies go back a long way, so when Meat Retail New Zealand approached us to take part in the Central Otago Study Tour, we had no hesitation in accepting, as it presents a great opportunity for us to learn new skills, garner inspiration and establish links with a nation prized for its farming heritage.

"Our hosts have arranged a fascinating tour, introducing us to some of the country’s finest butchers, farmers and chefs along the way. I hope to come home with a host of cutting-edge ideas for our new-look shop – and it would be the cherry on the cake to also return the Butchery Tri Nations champions too."

Lamb, beef and pork will be displayed and judged by independent judges from across all the nations.

Next year, the tables will turn as the GB team will be hosting a group of butchers from New Zealand and Australia to return the favour.
