QMS to run direct sell workshops for meat

Quality Meat Scotland (QMS) will be running a series of free workshops to help levy-payers add value through charcuterie and direct retail.

The workshops, which will take place in the coming months are an opportunity for producers to develop skills, which will allow them to diversify into selling meat directly.

According to QMS, the workshops will focus on the basic principles of charcuterie, including curing and smoking, and will be hands-on. Meanwhile, an afternoon session will provide attendees with a demonstration of a range of various products and preserving methods.

The direct retail workshops, led by trainer Gordon Gibb, will show levy-payers how they can set up a red meat direct sales business and will cover legislative requirements; the equipment required; profit margins; and re-investment.

QMS livestock development manager Kathy Peebles said: "These workshops use local produce and provide producers with the skills and confidence to diversify into new areas.

"Over the past two years, a number of workshop participants have gone on to start successful businesses selling home-produced red meat directly to consumers through farmers’ markets, farm shops or the internet."
