Cole has title in sights

Welsh butcher Gareth Cole of Neath Market is aiming for the hat-trick of becoming the Young Butcher of the Year as the competition opens up for entries.

The contest organised by the Cambrian Training Company along with sponsors Hybu Cig Cymru – Meat Promotion Wales, are looking for Welsh butchers who were under the age of 23 on 1 January 2009 to showcase their best butchery skills.

Cambrian Training Company’s managing director Arwyn Watkins said: “Gareth Cole has been a worthy champion for the last two years and it’s now up to other talented young butchers across Wales to put their names forward to challenge him.

“We are looking to attract talented young butchers who can use their skills to show how to add value to Welsh pork with a range of traditional cuts.”

The final will take place at the Royal Welsh Winter Fair in Builth Wells on 1 December, 2009, where applicants need to write down, in 250 words, some of the benefits of offering traditional cuts of Welsh pork to existing and new customers. They must also include proposed cuts, cooking methods, a recipe where appropriate and photographs to demonstrate cuts and presentation techniques.

Four finalists will be selected from their application forms, which must be received by Cambrian Training Company by 31 October. The winner will receive £200 prize money and a trophy while a runner-up will collect £100 and the other finalists will receive £25 each. Entry forms can be found at www.cambriantraining.com
