Eblex releases new beef carcase brochure

A new educational guide from Eblex shows how to identify age and conformation and distinguish between bulls, steers and heifers, by studying the carcase.

It studies how to identify sex and age and grade conformation by looking at differences in muscle development, changes in bone structure and exploring fat and meat colouration. The brochure is the latest addition to Eblex’s series of knowledge transfer guides, which share the organisation’s expertise and provide training tools to the industry.

Business development manager for Eblex Dick van Leeuwen, who produced the guide, said: “This guide combines the knowledge of Eblex’s team and it will enable businesses to educate and train the next generation of butchers and beef buyers.”

The brochure also includes two beef carcase classification charts, one showing the typical classification for cow beef and the other displaying conformation standards for Quality Standard Mark (QSM) beef. It contains examples of good and poor confirmation and images and descriptions of acceptable industry standards.
