Knife skills course launched

Duchy College and Etherington’s Butchery Academy are running a new knife skills course.

The one-day class, held in Wheal Rose, Cornwall, is an FDQ Level 2 Award course designed to equip students with a practical and theoretical knowledge of working with knives in the food and meat industry.

Numbers are limited to a maximum of six students per day to ensure each participant can receive one-on-one tuition.

Head tutor Francis Linn said: “An incredible amount of research, and drawing upon our practical expertise at the Butchery Academy, has gone in to creating a course that encompasses the FDQ Award criteria, but also delivers an interactive and exciting day for all involved.”

The course includes the history of knives, how they are made and how they can be used dexterously. Students will learn transferable skills that can be used in all areas of food production.

The course is part-funded by the European Social Fund (ESF), meaning that students will only pay £30 of the £100 cost to gain the qualification.
