New book examines food fraud forensics

A new book covering food fraud and the science behind it has been launched.

Sorting the Beef from the Bull by Richard Evershed and Nicola Temple takes a look at some of the biggest food scams over the past century and examines the science used to detect them.

Taking in everything from the recent horsemeat scandal in the UK to rat being sold as mutton in China, the book pledges to lift the lid on food scandals and explore “the arms race between food forensics and fraudsters”.

The hardback book is due to be launched in February 2016 with an RRP of £16.99.

Richard Evershed FRS is Professor of Biogeochemistry at the University of Bristol and, over his 30-year career, he has pioneered methods for studying prehistoric diet and agriculture, the environmental impacts of modern farming, and, notably, detecting food fraud, where his team developed a method for detecting the illegal adulteration of vegetable oil. His methods have been used in tandem with the Metropolitan Police to help in a murder investigation.

Nicola Temple is a biologist, conservationist and science writer, who works with universities, research councils and individuals to develop engaging science stories on how research has an impact beyond the closeted world of academia.
