Meet the Australian Steelers

We’ve already introduced you to the British Beef Eaters, who will be representing Great Britain in the World Butchers’ Challenge, but who will they be going up against to be crowned the best in the business? 

Fighting to win the title on home soil on 10 September are the Australian Steelers, sponsored by Australian Pork.

The team is made up of:
•    Tom Bouchier of Peter Bouchier Butchers of Distinction, Victoria
•    Paul Brady of Tender Gourmet Butchery Macquarie, New South Wales
•    Nick Dagg from The Heights Boutique Butchery, Queensland
•    Colin Garrett of Colin’s Butchery, New South Wales
•    Adam Stratton from Tender Gourmet Butchery Hornsby, New South Wales
•    Michael James (Team Captain), Carina North Quality Meats, Queensland

Stratton, who is no stranger to the competition, said versatility is key to success: “This will be my fifth time competing and I believe what sets us apart from the rest of the teams is our ability to bring consumer expectations to our display. Customers are often time poor so they want meal options that are easy to cook but still visually appealing and delicious.

“I reckon I’m a butcher, a baker and a chef. It’s a sign of the times; people expect more from their food and that’s what this competition is all about, it’s value-adding.”

Running alongside the team challenge, there will also be a competition designed for apprentices, as well as a Young Gun challenge, for qualified tradesmen and women under 30.

Representing Australia in the Young Guns division are Matthew Papandrea and Dianna Edwards, both from New South Wales, whilst Ryan Dougherty from South Australia and Suzanne Roeger from Victoria will wake part in the international apprentice competition.

The World Butchers’ Challenge will see teams of six from Australia, New Zealand, Great Britain and France compete over a three hour period. Teams will be given a full lamb carcase and beef side as the base ingredients, and will be allowed to provide their own seasonings, spices, marinades and garnish to finish their products, as well as their own props.

Independent judges from each country will judge and score the teams based on butchery skill, workmanship, product innovation, overall finish, presentation and display.
