Tom Kerridge to open butcher initiative this Friday

Michelin-starred chef Tom Kerridge is to open his butcher-come-pub project on Friday, 17 November 2017. 

Called The Butcher’s Tap, the hybrid butchery business and pub is a joint initiative between the celebrated chef and the Greene King pub chain. 

During the day, the site will serve as a butcher’s and bar. When 5pm comes around, the space will be transformed into a traditional pub. 

To deliver the butchery aspect of the business, Kerridge is working with butcher Andy Cook and trusted meat suppliers from across the country. Cook has been providing Kerridge with meat for his two Michelin-starred pub The Hand and Flowers for almost 10 years. 

The meat will include beef from Smithfield Market’s Longcroft & Old, sourced from Stoddart’s Farm in Scotland; venison and game from Hampshire Game; and pork and chicken from Packington Free Range. Duck from Creedy Carver and Copas Turkeys will also be available for the Christmas season.

Less conventional options will also be available, including black pudding from The Fruit Pig Company and British cured meats from Cobble Lane Cured. Recipe cards will also be available for consumers, providing advice from Kerridge on cooking the meats.

During the day hours, the deli will provide Sandridge Farm Bacon Rolls in the morning, and a Franconians Smoked Hot Dog with pulled pork, pickled chillies and mustard mayonnaise will be available from lunchtime.

Through the day and on into evening, customers will be able to enjoy pork pies, scotch eggs and sausage rolls. Kerridge’s own pork scratchings will be available from the bar alongside other bar snacks. The idea is to make the meals as enjoyable yet as simple as possible, with food being served through the day on disposable crockery giving the customer the option to eat in or take away.

When the butcher’s shop closes in the evening, as well as all day on Sunday, the establishment turns into a fully operating pub, which will serve a daily-changing hot dish every day.

This initiative will be the first of a series of joint venture concepts for the Greene King as part of its Pub Partners division.
